There’s “Muffin” Like a Banana Nut Muffin

This is the perfect reason to not feel so badly when your bananas go ripe before you have gotten the chance to eat them. This Banana Nut Muffin recipe is super easy.

Ingredients:
Dry Ingredients:

Dry Ingredients2 cups all-purpose flour
1/2 cup chopped walnuts
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda

 

 

 

Wet Ingredients:

1 stick melted butter
1/2 cup mashed banana
1/2 cup sour cream
2 room temperature eggs

Directions:

  1. Preheat oven to 350 degrees F.
  2. Mix together the flour, nuts, baking powder, salt and baking soda in a large mixing bowl.photo[15]photo[14]
  3. Whisk together the brown sugar, melted butter, mashed banana, sour cream and the eggs.photo[11]photo[10]photo[9]
  4. Fold the wet mixture into the dry mixture.photo[8]photo[7]photo[5]
  5. Prepare your muffin pan. Line your pan with liners. Coat the liners with cooking spray. This way, when the liner is pulled off the muffin, you lose less of the muffin.photo[6]
  6. Fill the muffin pan about 3/4 of the way full. This should make just 12 muffins.photo[4]
  7. If you want, sprinkle some brown sugar and a few small chopped nuts on the top of the muffins prior to baking.photo[3]
  8. You will bake the muffins for a total of 20-25 minutes. At the 10-minute mark, flip the muffin pan 180 degrees to ensure that the muffins are cooking evenly.photo[2]
